Strawberry yogurt ice lollies

If you can make a smoothie then you can make these fresh fruit ice-lollies. They are super nutritious containing real strawberries, banana, vanilla and yogurt. If you make them in the morning they will be ready for the afternoon and can be stored in the fridge until a glorious hot sunny day - that’s if you can wait that long. A perfect recipe to make with young children and you can teach them some important food science and nutrition along the way - e.g. calcium in milk and yogurt, using fresh fruit to sweeten food, how yogurt is made using bacteria etc….. 

Makes 10 ice-lollies

Ingredients

  • 400g Greek yogurt

  • 100ml full fat organic milk 

  • 1 ripe banana, medium size

  • 2 teasp honey

  • ½ teasp vanilla essence

  • 200g strawberries

Method

You will need ice-lolly moulds or empty small yogurt pots and lolly sticks.

Place the Greek yogurt, banana, honey and vanilla essence in the goblet of a blender or food processor and blend until smooth. Top up with a little milk so you can pour the liquid. into the ice-lolly moulds in the next stage.

Pour half of the mixture into a separate jug. Add the strawberries to the remaining mixture and blend until smooth. You will need a total of 500ml of liquid to fill 10 ice-lolly moulds. You now have approx 250mls of plain mixture and 250ml of strawberry flavoured mixture.

Fill each ice-lolly mould half full with the unflavoured mixture and place in the freezer for two hours or until just beginning to freeze. 

Top up the ice-lolly mould with the strawberry flavoured mixture. Place the ice-lolly sticks in the moulds and return the ice-lollies to the freezer for a couple of hours until frozen. If you are using small, empty yogurt pots as moulds you might need to let the mixture set before inserting the ice-lolly sticks.
