Pumpernickel sourdough

This is a classic, aromatic, malty pumpernickel. It is easy to make and the malty grains make it smell wonderful as it cooks. This bread goes really well with smoked salmon, shavings of Comté cheese, and toppings such as hard-boiled eggs, capers, gherkins and dill.

Simple spelt bread

This is one of my all time favourite home made bread recipes. It is simple and quick to make in a few hours with minimal input from the cook. The loaf can be made and proved quickly in the evening and left in the fridge overnight to rise ready to be baked first thing in the morning.

Pide or pizza?

I have long been a fan of thin, crisp, freshly made pizza. Especially if cooked in a wood fired oven. What I did not realise that a Turkish version called pide is just as delicious. Turkey like other Middle Eastern countries, has beautiful flat bread which are cooked quickly and topped with a small amount of delicious, simple ingredients such as spinach, kasar cheese, onion, walnuts and red pepper or, diced beef, tomato, green pepper and parsley.

Rye loaf with prunes and pink pepper

I love spending time in Northern Finland where we eat beautiful rye bread. It is chewy, lasts long time and has lots of flavour. We love it. So when Shipton Mill asked me to write about rye flour for their website I was delighted.
